Step 1: Season the yellowtail and grill it on medium heat
Step 2: Make the fresh guac. Add garlic, 2 grape tomatoes, kosher salt and pepper to a mortar & pestle. Next add 2 ripe avocados, chopped red onion, lime juice and chopped tomatoes. Mix well
Step 3: Fry up your plantains, smash the plantain and finish the second fry to create a crispy tostone. Be sure to place on a paper towel and season with salt and pepper.
Step 4: Assemble, place the tostone on your plate. Add guac, chopped yellowtail, tomato, chopped red onion, lime juice and top with chipotle sour cream.
